Day 2

It's my official day two of being completely vegetarian. <Deep Breath>

I made my smoothie this morning first thing and it definantly didn't go as planned. My blender doesn't compare to Kate's and it showed in both the color AND taste of my smoothie. YUCK. The color was this green, brown, pink chunk of nastiness. I mustered through it. On my lunch break I rushed to Bed, Bath and Beyond and bought my very own commerical grade blender. That should solve my problem... but what to do until Friday when it gets here? Maybe I'll have to leave a bit early to venture to Smoothie King. I'm certainly not attempting another smoothie in my cheapie blender.

I've been craving a avocado-hummus sandwich for quite some time. So this was lunch. MMmmm.. if this is what no meat tastes like I'm so in! Maybe my next sandwich will be a portabella! LOVE!

 I got home ready to make my dinner to go...wait...what can I cook. I guess I need to look up some good vegetarian receipies. I need to find some that are more so veggie and less pasta heavy. I guess I know what I'm going to be 'googling' next! :)

I'm finding this whole adventure so very invigorating. Like I'm doing something incredible healthy and good for my body and my life. I can already feel a difference in the way my body's functioning. I have lost my food cravings all together, which says A LOT. Normally, I'm ravenously hungry when I get home but today I felt no hunger pain. Awesome.

Also, I've started a compost with my veggie scraps! I'm loving trying to be as green as possible and can't wait to see what's next on my list of changes!

  1. This is awesome Jen! Congrats!! I also jumped on the (almost) meatless diet bandwagon this year from reading the China Study and talking with my friends in the Environmental Health department at school. When I watched the movie Food, Inc. it really sealed the deal for me, and now I make sure to only get dairy that's free-range, grass-fed, and antibiotic free- for both environmental AND health reasons. There's some pretty scary studies coming out now about the long-term effects we're starting to see from all the hormones and antibiotics we're exposed to in dairy! Food Inc. does an awesome job of showing how the effects of the way we raise animals and process meat messes with our health- you should check it out if you haven't seen it already!

    Good luck with the new veg diet! I bet in a few days you'll start to feel fantastic. Have you thought about getting a juicer? My hardcore vegetarian friends swear by it! Looking forward to reading more posts =)

  3. I can't believe my sisters are dogging the breakfast that I lovingly wake up and make for them...
    However, although I think all three of you may have fallen off the turnip truck one too many times, I will support you with all of the goodies from our Aquaponics garden!!!

    I'm going to eat a hamburger for you guys now - maybe even a double!!!

    And I forgot to get my basil when I left on Sunday! :( Maybe you can send some with Mom. She's coming up here on Sunday (this). BTW Mark, much kudos to you for your aquaponics garden. It is very cool!
